Taze olarak sa\u011f\u0131lan s\u00fct past\u00f6rize edilir ve oda s\u0131cakl\u0131\u011f\u0131na gelene kadar so\u011futulur. Taze ke\u00e7i s\u00fct\u00fc kullan\u0131l\u0131r. S\u00fct, zararl\u0131 bakterilerden ar\u0131nd\u0131rmak i\u00e7in yakla\u015f\u0131k 65\u00b0C&#8217;de 15-20 dakika past\u00f6rize edilir ve sonra oda s\u0131cakl\u0131\u011f\u0131na so\u011futulur. 30-35\u00b0C&#8217;ye getirildikten sonra peynir mayas\u0131 eklenerek 30-60 dakika bekletilir.
